We had the yebeg wott (lamb) and the vegetarian special. From there we headed to the aquarium in Dallas.
A. did not like the aquarium at first but it began to grow on her towards the end.

Everything seemed okay...
... except that it didn't make bubbles. My helper was not impressed. She did several hand gestures to tell me what I was doing wrong. After tasting it she said, "mommy, injera no!" and then made gagging sounds. Into the trash it went.
I watched a Youtube video that said to let the teff flour ferment in water for three days. I left it on the kitchen counter with cellophane over it. The smell that came out of the glass container when I lifted the cellophane three days later was horrendous! I convinced myself that maybe it is the normal injera smell so I threw it in the hot pan, with my helper watching carefully. When something smells THAT BAD, I'm going to say from now on that adding heat is probably unwise. The smell was amplified and I almost got sick standing there. I ended up having to dump it, take the trash outside of the house, open up my kitchen windows on a 20 degree F. day to keep from puking. There were no bubbles. There would be no taste test. A. left the kitchen shaking her head. I may rebuild my confidence by making the cheaters injera, using baking soda or yeast. In the mean time, A. has stopped asking for it.

That is so cool that you have Ethiopian food available in your town. Good for you for trying the injera--wishing you better luck next time.
